Ingredients

  • 650 g boneless, skinless chicken breast fillet
  • 180 g Halloumi cheese
  • 180 g almond flakes
  • 2 eggs (size M/L)
  • 100 g natural yogurt
  • 1 tbsp Dijon mustard

  • 1 pinch salt
  • 1 pinch ground black pepper

Preparation

    Preheat the oven to 195–200 °C. Prepare a baking sheet and line it with baking paper.

    Wash and pat dry the chicken breast fillets. Cut the fillets lengthwise in half to create thinner schnitzels. Season the meat on both sides with salt and pepper. Grate the Halloumi cheese finely.

Breading & Baking

    Prepare two bowls. In the first bowl, mix the finely grated Halloumi with the almond flakes. In the second bowl, thoroughly mix the natural yogurt with the Dijon mustard and the eggs.

    First, generously coat both sides of the chicken fillets with the yogurt-mustard mixture. Then, dredge the meat in the almond-Halloumi mixture and gently press the crust. Place the breaded schnitzels on the prepared baking sheet.

    Slide the baking sheet into the preheated oven and bake the schnitzels for approx. 25–27 minutes at 195–200 °C until golden brown. Serve immediately.
Tip
Serve the schnitzels with a fresh green salad or roasted vegetables for a perfect low-carb meal.
