Ingredients for Falafel & Wraps
- 250 g dried chickpeas
- 10 pcs wheat tortillas
- 1 pc fresh lime
- 1 pc fresh Lollo Rosso lettuce
- 2 pcs yellow onions
- 3 cloves fresh garlic
- 500 ml vegetable oil for deep-frying
- 1 tsp ground cayenne pepper
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 pinch ground red pepper
- 1 pinch fine table salt
- 1 handful fresh cilantro bunch
Ingredients for the Mayonnaise
- 6 tbsp mayonnaise jar
- 1 tbsp lime juice 100%
- 4 tsp hot chili paste
- 1 pinch ground black pepper
Preparation of the Falafel
- 1Soak the dried chickpeas in plenty of water for 12 hours before preparation. Then rinse thoroughly and drain.
- 2Blend the chickpeas together with the finely chopped onions and pressed garlic. Stir in the spices (cumin, coriander, cayenne pepper, red pepper) and the chopped fresh cilantro. Season with salt.
- 3Form small golf-ball-sized balls from the mixture.
- 4Heat plenty of vegetable oil in a pot so that the balls can float in it. First, sear them sharply, then reduce the heat and deep-fry until golden brown for a few minutes. Drain on kitchen paper.
Sauce & Serving
- 1For the chili mayonnaise, mix all ingredients (mayonnaise, lime juice, chili paste, black pepper) and chill.
- 2Briefly warm the tortillas in a dry pan.
- 3Fill the tortillas with lettuce leaves and falafel and generously drizzle with the chili-lime mayonnaise. Serve immediately.
