Ingredients for Falafel & Wraps

  • 250 g dried chickpeas
  • 10 pcs wheat tortillas
  • 1 pc fresh lime
  • 1 pc fresh Lollo Rosso lettuce
  • 2 pcs yellow onions
  • 3 cloves fresh garlic
  • 500 ml vegetable oil for deep-frying
  • 1 tsp ground cayenne pepper
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 pinch ground red pepper
  • 1 pinch fine table salt
  • 1 handful fresh cilantro bunch

Ingredients for the Mayonnaise

  • 6 tbsp mayonnaise jar
  • 1 tbsp lime juice 100%
  • 4 tsp hot chili paste
  • 1 pinch ground black pepper

Preparation of the Falafel

    Soak the dried chickpeas in plenty of water for 12 hours before preparation. Then rinse thoroughly and drain.

    Blend the chickpeas together with the finely chopped onions and pressed garlic. Stir in the spices (cumin, coriander, cayenne pepper, red pepper) and the chopped fresh cilantro. Season with salt.

    Form small golf-ball-sized balls from the mixture.

    Heat plenty of vegetable oil in a pot so that the balls can float in it. First, sear them sharply, then reduce the heat and deep-fry until golden brown for a few minutes. Drain on kitchen paper.

Sauce & Serving

    For the chili mayonnaise, mix all ingredients (mayonnaise, lime juice, chili paste, black pepper) and chill.

    Briefly warm the tortillas in a dry pan.

    Fill the tortillas with lettuce leaves and falafel and generously drizzle with the chili-lime mayonnaise. Serve immediately.
