Peel the potatoes and onions and slice them as thinly as possible.

Frying

In a large pan (approx. 25 cm diameter), heat 100 ml sunflower oil over medium heat. Add the potato and onion slices and fry for 2–3 minutes.

Reduce the heat to low to medium and continue frying the potatoes with the onions, stirring constantly, for another 13–15 minutes until each piece is golden brown.

Chef's tip

Serve the tortilla with a fresh green salad or a dollop of aioli for the authentic tapas feeling.
