Preparation of the Tortillas
Heat 200 ml of water. Put the spelt flour, salt, and sunflower oil into a mixing bowl. Mix the ingredients with the dough hook of a food processor on low speed, gradually adding the warm water. Once a compact dough has formed, increase the speed and knead the dough until smooth for about 5 minutes.
Divide the dough into 5 equal pieces and form them into balls. Cover them with a kitchen towel to prevent them from drying out.
Heat a coated pan (or a lightly oiled steel pan). Meanwhile, roll out each dough ball on a lightly floured surface into a thin flatbread with a diameter of approx. 26 cm and a thickness of 1 mm. Thanks to the oil in the dough, it is very easy to work with.
Chef's tip
The tortillas remain particularly soft if stored immediately after baking in a closed container or between damp towels. They can also be prepared in advance very well.
