First, prepare the pesto: Place the spinach leaves, along with garlic, almonds, and olive oil, into a blender and process until smooth. Then add the finely grated Parmesan and lime juice, and season with salt.

Fry the grilled cheese in a pan or on the grill until golden brown on both sides.

Wash the lettuce leaves and let them drain. Also wash the cherry tomatoes and halve or quarter them.
