Preparation of the Falafel

Soak the dried chickpeas in plenty of water for 12 hours before preparation. Then rinse thoroughly and drain.

Blend the chickpeas together with the finely chopped onions and pressed garlic. Stir in the spices (cumin, coriander, cayenne pepper, red pepper) and the chopped fresh cilantro. Season with salt.

Form small golf-ball-sized balls from the mixture.
