Preparation
First, prepare all ingredients: Cut the breakfast bacon into small pieces. Peel and finely dice the red onion. Halve or quarter the cherry tomatoes depending on their size. Grate the cheddar cheese. Finely chop the fresh coriander and cut the jalapeños into small pieces.
Preparing the Filling
Heat a pan and fry the bacon until crispy. Meanwhile, whisk the eggs in a bowl, lightly season with salt and pepper. Remove half of the bacon from the pan. Cook an omelette from half of the eggs and sprinkle with some cheddar just before the end. Prepare a second omelette from the remaining eggs and bacon. Cut the finished omelettes into strips.
In a bowl, mix the tomatoes with a little olive oil, the diced onions, and the chopped coriander. Season with salt and pepper. In a separate bowl, stir the beans with the salsa sauce.
