Preparation method
Heat 1 tablespoon of olive oil in a pan over medium-high heat. Season the steak generously with salt and pepper and sear for approx. 3-4 minutes per side (depending on desired doneness). Place the meat on a cutting board, cover with aluminum foil, and let rest for 10 minutes. Then cut into thin strips.
Add the remaining tablespoon of oil to the pan. Add the sliced red onion and all three types of bell peppers and sauté for approx. 6 minutes until soft and lightly browned. Stir in chopped garlic, cilantro, lime juice, and the spicy salsa sauce. Mix everything well and simmer for approx. 1 minute.
Sprinkle a quarter of the cheddar onto each tortilla, then distribute some of the meat strips, the vegetable mixture, and some Gouda. Fold the tortillas in half.
