Preparation method
First, prepare a large pan (at least 20 cm diameter) and heat it over medium heat. Place the tortillas in the dry pan and toast them for 30–60 seconds per side until lightly crispy. Remove the tortillas from the pan and distribute them onto plates.
Now add the rapeseed oil to the pan and prepare the fried eggs: Carefully crack the eggs into the pan, ensuring the yolk remains intact. Season with salt and pepper and fry over low to medium heat for approx. 6–8 minutes. Remove the pan from the heat, but let the eggs rest in it for a moment.
Meanwhile, prepare the remaining ingredients: Halve the avocado, remove the pit, peel, and slice into fine pieces. Cut the iceberg lettuce into fine strips. Finely dice the tomato and place it in a small bowl. Crumble the Balkan cheese directly into the tomato, mix, and season with a pinch of salt and pepper.
