Deseed the red bell pepper and cut it into fine cubes along with the onion and tomato. Peel the garlic and chop or press it very finely. Put everything into a large salad bowl.

Dressing & Finishing

In a small bowl, vigorously whisk the olive oil with the red wine vinegar until a smooth vinaigrette forms.

Pour the vinaigrette over the prepared vegetables. Pluck the leaves from the fresh oregano, chop them finely, and add them to the salad.

This salad tastes best when it has rested well. It pairs excellently with steaks, grilled sausages, or as a fresh component in a taco.
