Ingredients
- 350 g sweet potatoes
- 250 g broccoli
- ½ lemon
- 20 g unsalted butter
- 1 tsp ground chili powder
- 400 g salmon fillet (approx. 2 fillets)
- 1 handful fresh flat-leaf parsley
- 100 g Balkan cheese (or Feta)
- Salt
- Ground black pepper

Preparation
- 1Preheat the oven to 180–185 °C. Prepare a baking dish (approx. 20 cm x 30 cm) and line it with baking paper.
- 2Peel the sweet potatoes and cut them into thin slices. Divide the broccoli into small florets and slice half of the lemon thinly. Melt the butter in a small saucepan over low heat (approx. 1–2 minutes). Place the sweet potato slices, lemon slices, and broccoli florets into the baking dish. Season the vegetables with salt, pepper, and chili powder, pour the melted butter over them, and mix everything well. Place the salmon fillets on top and season them with salt and pepper as well. Bake in the preheated oven for 20–25 minutes at 180–185 °C.
- 3Meanwhile, roughly chop the parsley and crumble the Balkan cheese.
- 4Once the salmon and vegetables are cooked, remove the dish from the oven. Sprinkle the crumbled cheese and fresh parsley over the dish and serve immediately.
Tip
You can cut the other half of the lemon into wedges and serve them alongside – this way, everyone can refine the salmon with fresh lemon juice to their liking.
