Preparing the sushi rice
Rinse the sushi rice thoroughly under cold water until the water runs almost clear. Place in a pot with water, cover, and bring to a boil. Once boiling, reduce the heat to a minimum and simmer for 15 minutes with the lid closed. Remove from the heat and let it rest for another 10 minutes.
In the meantime, prepare the seasoning mixture. In a small pot, mix the rice vinegar, sugar, and salt. Heat briefly until the sugar and salt have dissolved, then let it cool slightly.
Place the warm rice in a bowl and gently fold in the seasoning mixture. Let it stand for 5 minutes, then stir occasionally and allow to cool to room temperature. The rice should be pleasantly sticky, hold its shape, and the individual grains should remain clearly visible.
