Dampfend heiß, herzhaft und herrlich wärmend: Dak Kalguksu ist der koreanische Wohlfühl-Klassiker schlechthin. Zartes, saftig gezupftes Hähnchen trifft auf bissfeste Nudeln, feine Zucchinistreifen und eine aromatische Brühe mit Knoblauch, Ingwer und geröstetem Sesamöl. In nur 35 Minuten steht dieser Seelentröster dampfend auf dem Tisch.
Preparation method
Broth & Chicken
Rinse chicken breast fillets under cold water and pat dry. Peel garlic cloves and lightly crush, cut ginger into thin slices. Cut off the white part of the spring onions (reserve the greens for later).
Add chicken broth along with chicken breast, garlic, ginger slices, and the white parts of the spring onions to a large pot. Bring to a boil, reduce heat, and simmer gently for about 15 to 20 minutes until the chicken is cooked through and juicy.
Lift the chicken breast out using tongs and allow to cool briefly. Remove the garlic, ginger, and spring onion remnants from the broth with a slotted spoon. Shred the chicken meat into bite-sized pieces using two forks.
Chef's tip
For an extra aromatic note, you can briefly marinate the shredded chicken meat before adding it back with a teaspoon of sesame oil, a little grated garlic, and a splash of soy sauce.
Traditionally, crunchy, spicy kimchi pairs well with this, giving the velvety soup a refreshing acidity.
