Dough Preparation
Separate the egg, setting aside the yolk from the white.
Crumble the fresh yeast into a bowl, pour the lukewarm milk over it, and stir until smooth.
In a food processor, mix both types of flour, pepper, and salt. Add the egg yolk and the yeast mixture and knead on medium speed for about 5 minutes until a smooth dough forms. Cover the dough with a clean kitchen towel and let it rise in a warm place for about 1 hour.
Chef's tip
Make sure the milk is not too hot, as this would destroy the yeast cultures.
For the best results, a cast-iron pan is excellent for frying.
Use high-quality, firm sour cream for the perfect consistency.
Variation: Instead of caviar, the blinis also taste excellent with thin slices of smoked salmon.
