Ingredients
- 400 milliliters Fresh milk
- 5 Eggs
- 50 grams Sugar
- 50 grams Unsalted butter
- 50 grams Raisins
- 2 tbsp Powdered sugar
- Salt
- 250 grams Flour Type 405
Preparation
- 1Separate the eggs. Whisk the egg yolks with milk, raisins, sugar, flour, and salt to form a smooth batter. Beat the egg whites until stiff and carefully fold the stiffly beaten egg whites into the batter.
- 2Heat butter in a large pan, pour in the batter, and fry the Kaiserschmarrn pancake on both sides first.
- 3Preheat oven to 180 °C. Then bake the Kaiserschmarrn, along with the pan, for about 10 minutes until golden brown.
- 4Remove the pan from the oven and tear the baked Kaiserschmarrn pancake into small, bite-sized pieces. Then bake again in the oven for 2 minutes. Finally, sprinkle the Kaiserschmarrn with powdered sugar and serve.
Tip
Garnish your Kaiserschmarrn with plum compote (Zwetschgenröster) or apple sauce if you like it extra sweet.
