Ingredients
- 250 grams flour Type 405
- 400 milliliters fresh milk
- 5 eggs
- 50 grams sugar
- 50 grams unsalted butter
- 50 grams raisins
- 2 tbsp powdered sugar
- Salt
Preparation
- 1Separate the eggs. Whisk the egg yolks with milk, raisins, sugar, flour, and salt to form a smooth batter. Beat the egg whites until stiff and carefully fold the stiffly beaten egg whites into the batter.
- 2Heat butter in a large pan, pour in the batter and first fry the Kaiserschmarrn pancake on both sides.
- 3Preheat the oven to 180 °C. Then bake the Kaiserschmarrn, along with the pan, for about 10 minutes until golden brown.
- 4Remove the pan from the oven and tear the baked Kaiserschmarrn pancake into small, bite-sized pieces. Then bake again in the oven for 2 minutes. Finally, sprinkle the Kaiserschmarrn with powdered sugar and serve.
Tip
Garnish your Kaiserschmarrn with plum compote (Zwetschgenröster) or apple sauce if you like it extra sweet.
