  • 400 milliliters Fresh milk
  • 5 Eggs
  • 50 grams Sugar
  • 50 grams Unsalted butter
  • 50 grams Raisins
  • 2 tbsp Powdered sugar
  • Salt
  • 250 grams Flour Type 405

Preparation

    Separate the eggs. Whisk the egg yolks with milk, raisins, sugar, flour, and salt to form a smooth batter. Beat the egg whites until stiff and carefully fold the stiffly beaten egg whites into the batter.

    Heat butter in a large pan, pour in the batter, and fry the Kaiserschmarrn pancake on both sides first.

    Preheat oven to 180 °C. Then bake the Kaiserschmarrn, along with the pan, for about 10 minutes until golden brown.

    Remove the pan from the oven and tear the baked Kaiserschmarrn pancake into small, bite-sized pieces. Then bake again in the oven for 2 minutes. Finally, sprinkle the Kaiserschmarrn with powdered sugar and serve.
Tip
Garnish your Kaiserschmarrn with plum compote (Zwetschgenröster) or apple sauce if you like it extra sweet.
