Preparation method

Separate the eggs. Whisk the egg yolks with milk, raisins, sugar, flour, and salt to form a smooth batter. Beat the egg whites until stiff and carefully fold the stiffly beaten egg whites into the batter.

Heat butter in a large pan, pour in the batter and first fry the Kaiserschmarrn pancake on both sides.

Preheat the oven to 180 °C. Then bake the Kaiserschmarrn, along with the pan, for about 10 minutes until golden brown.

Chef's tip

Garnish your Kaiserschmarrn with plum compote (Zwetschgenröster) or apple sauce if you like it extra sweet.
