Preheat the oven to 160 °C top/bottom heat.

Season the meat generously with salt on all sides and tie it with kitchen twine to help it keep its shape during cooking.

Cut the fennel lengthwise into quarters. Finely grate the zest of the orange (only the orange part). Then peel the orange and divide it into individual segments. Slice the garlic thinly.
