Preparation method

Bring 1 liter of water with 2 teaspoons of oregano, 2 teaspoons of basil, and 1 teaspoon of salt to a boil in a large pot. Once the water boils, add the soy granules, reduce the heat to medium, and simmer for about 10 minutes until the soy is soft.

Meanwhile, peel the potatoes and cut them into thin slices. Preheat the oven to 200 °C top/bottom heat and line a casserole dish (approx. 25 cm Ø) with baking paper.

Drain the cooked soy granules and place them in a blender. Blend briefly until a finer consistency is achieved, but still with some texture (not a paste). Transfer the soy to a large bowl and mix with the minced beef, tomato paste, chopped tomatoes, the remaining oregano and basil, paprika powder, and spring onions. Season generously with salt and pepper.

Chef's tip

For an extra crispy crust, you can briefly brown the potatoes with the oven's grill function at the end of the baking time.
