Preparation method
Preparation & sautéing vegetables
Thoroughly wash the leek, slice it in half lengthwise, and cut into approx. 1–2 cm wide pieces. Peel the carrot and cut into thin half-moons. Finely dice the onion and garlic cloves.
Heat the olive oil in a large pot. Sauté the onion and carrot over medium heat for 3–4 minutes until translucent. Add the garlic and leek and gently sauté for another 3 minutes until the leek collapses and releases its aroma.
Cooking the soup & adding the terbiye
Pour the vegetable broth over the vegetables, season with fine table salt and black pepper, and bring to a boil. Cover and simmer gently over medium heat for approx. 15 minutes until the vegetables are tender.
Chef's tip
Gradually equalizing the temperature (tempering) of the yogurt-egg mixture with hot broth reliably prevents the terbiye from curdling.
For extra texture, a small handful of Turkish short-grain rice can also be cooked along with the leek.
