Cover the glass noodles with lukewarm water in a bowl and let soak for approx. 5 to 7 minutes until pliable. Then drain in a sieve, let drain briefly, and cut two to three times with kitchen scissors.
Peel the ginger and cut into thin slices. Crush the garlic with the flat side of a knife and roughly chop. Trim the spring onions and cut into approx. 4 cm pieces. Wash the coriander; finely chop the stems and set the leaves aside for garnish.
In a small bowl, whisk together the chicken broth with soy sauce, oyster sauce, sesame oil, brown cane sugar, and ground black pepper until the sugar has completely dissolved.
Chef's tip
In Thailand, Goong Ob Woon Sen is traditionally served directly in a clay pot or cast-iron pot, keeping the dish hot and aromatic at the table for a long time.
Make sure to keep the pot tightly covered during simmering so that steam does not escape and the noodles cook until wonderfully juicy.
