Chả Cá Lã Vọng ist eine legendäre Spezialität aus Hanoi: Zarter Kabeljau wird mit Kurkuma, Ingwer und Knoblauch mariniert, goldgelb gebraten und mit reichlich frischem Dill und Frühlingszwiebeln auf zarten Reisnudeln serviert. Geröstete Erdnüsse und ein Hauch Limette runden dieses aromatische Sommergericht perfekt ab.

Pat the cod fillet dry and cut into approx. 3–4 cm pieces.
Peel and finely grate the ginger, finely chop the garlic cloves. In a bowl, mix together the turmeric powder, grated ginger, chopped garlic, 2 tbsp fish sauce, 1 tsp cane sugar, and 1 tbsp vegetable oil to make a marinade. Add the fish, toss gently, and leave to marinate for approx. 15 minutes.
Cook the rice noodles in boiling water according to package instructions, then rinse with cold water, drain, and divide among serving bowls.
Chef's tip
Chả Cá Lã Vọng is traditionally prepared directly at the table in Hanoi. Don't scrimp on the dill – the harmonious interplay of turmeric, white fish, and fresh dill makes this dish unique.
If you like, you can garnish with fresh cilantro and fresh mint before serving.
