
Salmon with Parsley Sauce

Preparation method
Preheat the oven to 200-205 °C. Line a baking sheet with parchment paper.
Prepare the salmon: Wash the fillets, pat them dry, and brush with rapeseed oil. Season with salt and pepper, drizzle with a little honey, and place on the baking sheet. Bake in the preheated oven for about 10-11 minutes, depending on the thickness of the fillets.
Meanwhile, prepare the sauce: Peel the garlic and place it in a tall mixing cup. Add parsley, dill, lemon zest and juice, salt, pepper, olive oil, dried oregano, and 50 ml of water. Blend everything finely with an immersion blender until a smooth, green sauce is formed. Let it steep at room temperature.
Chef's tip
Serve with light side dishes such as steamed seasonal vegetables, a fresh green salad, or tender boiled potatoes to perfectly complement the flavors of the herb sauce.
