Remove the fish from the refrigerator about an hour before grilling so it can reach room temperature. This ensures more even cooking.

Thoroughly clean and pat dry the sea bream. With a sharp knife, lightly score the skin diagonally on both sides. Peel and press the garlic and mix it with the olive oil.

Generously season the fish inside and out with salt and pepper. Then rub with the garlic oil, paying special attention to ensure the oil gets into the incisions.

Chef's tip

Use fish tongs for the grill so that the delicate skin of the sea bream does not stick to the grate and the fish does not fall apart when turning.
