Cut the mozzarella into sticks about 1 cm thick. Whisk the eggs in a bowl and lightly salt them. In a second bowl, mix the breadcrumbs with the Italian herbs.

First, coat the mozzarella sticks in the egg, then in the breadcrumb mixture. For an extra stable crust, repeat the process: dip the sticks through the egg again and thoroughly coat them once more in the breadcrumbs, pressing the coating firmly so that the cheese does not run out during frying.

Place the prepared sticks in the freezer for at least 60 to 90 minutes. This step is crucial for the cheese to retain its shape during frying.
