Chicken & Marinade
- 600 g chicken breast fillet without skin
- 15 ml extra virgin olive oil
- 1 tsp curry powder
- 1 tbsp soy sauce
- 1 pinch ground black pepper
- 1 lemon (juice and zest)
Peanut Sauce
- 75 g peanut butter
- 1 clove garlic cloves
- 1 tbsp soy sauce
- 1 red chili pepper
- 1 pinch fine sea salt
Preparation & Marinating
- 1Preheat the grill or prepare a grill pan.
- 2For the marinade, zest the lemon and squeeze out the juice. In a large bowl, mix lemon juice, lemon zest, curry powder, soy sauce, and pepper.
- 3Wash the chicken breast fillets, pat them dry, and cut them lengthwise into strips about 1 cm wide. Each breast yields about 3–4 strips.
- 4Add the chicken strips to the bowl with the marinade, mix well, and let marinate for at least 15 minutes at room temperature.
Grilling & Preparing the Sauce
- 1Thread the marinated meat strips in a wavy pattern onto wooden skewers (approx. 20-25 cm long). Use about 2 strips per skewer, resulting in about 6–8 skewers.
- 2Place the skewers on the hot grill and sear for about 2–3 minutes on each side. Then, finish cooking for another 3–4 minutes over indirect heat or reduced temperature.
- 3While the meat is cooking, prepare the peanut sauce: Peel the garlic, deseed the chili, and finely chop. Put peanut butter, garlic, chili, soy sauce, and a pinch of salt into a blender cup. Add a little water and blend with an immersion blender until a smooth sauce is formed.
- 4Arrange the finished chicken skewers on plates and serve with the peanut sauce. Jasmine rice or a fresh salad are excellent accompaniments.
