Ingredients

  • 4 whole grain tortillas
  • 200 g carrots
  • 1 tbsp extra virgin olive oil
  • 1 tsp smoked paprika powder
  • 1 pinch ground cumin
  • 150 g plain hummus
  • 2 handfuls fresh arugula
  • 8 radishes
  • 1 pinch salt
  • 1 pinch ground black pepper

    Peel the carrots and cut them into sticks of roughly equal size (fry shape). In a bowl, thoroughly mix with olive oil, smoked paprika powder, cumin, and a pinch of salt.

    Spread the seasoned carrot sticks on a baking sheet lined with parchment paper and roast in the preheated oven at 200 °C (convection) for about 20 minutes, until soft and lightly browned.

    Meanwhile, wash the radishes and cut them into thin slices. Wash the arugula and shake dry.

    Warm the whole grain tortillas briefly in a pan or oven as desired. Spread each tortilla generously with hummus.

    Top the wraps with arugula, the roasted carrots, and radish slices. Sprinkle with some freshly ground pepper.

    Fold in the sides of the tortillas slightly, roll them up tightly, and cut diagonally as desired. Serve immediately or pack for on the go.
Tip
For an extra portion of freshness, you can add a few splashes of lemon juice over the carrots.
The wraps can be prepared excellently in advance and are ideal for meal prep in the office.
