Ingredients

  • 200 g fresh green beans
  • 100 g piece of bacon
  • 2 large shallots
  • 5 large garlic cloves
  • 50 g almond flakes
  • Several sprigs fresh thyme
  • 1 tbsp extra virgin olive oil
  • 1 tbsp unsalted butter
  • 1 tbsp honey
  • 1 tbsp white wine vinegar
  • Salt
  • Ground black pepper

Instructions

    Peel the shallots and garlic. Cut the shallots into half rings, slice 4 garlic cloves thinly, and press the remaining clove. Wash the beans and trim the ends. Heat oil and butter in a pan and sauté the shallots until golden brown. Add the sliced garlic and fry briefly, then remove everything from the pan and set aside.

    Cut the bacon into small cubes and fry until crispy in the pan. Return the shallots and garlic to the pan, add the beans, and season with salt and pepper.

    Mix honey with white wine vinegar and stir into the beans along with the pressed garlic and thyme sprigs. Fry everything for about 5-7 minutes until the beans are cooked but still crisp.

    Meanwhile, toast the almond flakes in a fat-free pan until golden brown. Once the beans are ready, fold in the almonds and serve immediately.
