Rinse chicken thighs thoroughly in cold water. Peel the radish and cut into slices approx. 1 cm thick. Halve the onion, peel the garlic cloves, and slice the ginger thickly. Wash the spring onions and slice into fine rings.
Soak the glass noodles in a bowl of warm water for approx. 15 minutes, then drain and set aside.
Making the broth & cooking the chicken
Place chicken thighs, onion halves, garlic, ginger, and radish slices into a large pot and cover with approx. 1.5 litres of cold water.
Chef's tip
For an even more authentic Korean touch, serve the soup with freshly fermented kimchi and a small bowl of cooked sticky rice.
If you like it spicy, serve with Gochugaru (Korean chili flakes) or a little finely chopped fresh red chili.
