Preparing the Meatballs

Peel and very finely chop the garlic cloves. Wash the fresh parsley, shake dry, and chop finely. Set aside two-thirds of the chopped parsley for garnishing later.

In a bowl, thoroughly mix the minced chicken with the breadcrumbs, half of the chopped garlic, ground cumin, dried oregano, the remaining chopped parsley, 1/2 tsp fine table salt, and a pinch of ground black pepper. Shape the mixture into about 8–10 oblong, oval meatballs (soutzoukakia).

Frying & Simmering in Aromatic Sauce

Heat 2 tbsp olive oil in a large pan over medium-high heat. Add the chicken soutzoukakia and fry all around for about 4–5 minutes until golden brown, then briefly remove from the pan onto a plate.

Chef's tip

For especially juicy soutzoukakia, moisten your hands with a little cold water when shaping – this makes it effortless to shape the tender minced poultry into the traditional oval form.

For an authentic Greek touch, deglaze the tomato paste with a splash of dry red wine before adding the canned tomatoes.
