Mix the minced pork with 1 tablespoon of soy sauce (the remaining 3 tablespoons will be used later for the sauce). Lightly salt the meat, mix well, and let it marinate for about 10 minutes.
In the meantime, finely chop the garlic, ginger, and chili pepper. Cut the spring onions into fine rings, separating the white and green parts.
Heat the vegetable oil strongly in a wok or a large pan. Briefly sauté the garlic, ginger, chili, and the white part of the spring onions until fragrant. Add the minced meat and fry until crumbly, stirring constantly, until fully cooked.
Chef's tip
For an extra crunchy touch, you can also sprinkle roasted peanuts over the finished dish.
