Preheat the oven to 200 °C. Cut the vegetables (pumpkin, beetroot, and bell pepper) into even slices or pieces and spread them on a baking sheet lined with baking paper.

Brush the vegetables with about half of the rapeseed oil, sprinkle with the Herbes de Provence, and salt lightly. Roast in the oven for approx. 20 minutes until cooked through and lightly browned.

Meanwhile, cook the whole grain pasta in plenty of salted water according to the package instructions until al dente.

Chef's tip

For extra flavor, you can refine the vegetables with a splash of lemon juice before serving.
