Mix the ground pork with 1 tablespoon of soy sauce (the remaining 3 tablespoons will be needed later for the sauce). Lightly salt the meat, stir well, and let it marinate for about 10 minutes.

Meanwhile, finely chop the garlic, ginger, and chili pepper. Cut the spring onions into fine rings, separating the white and green parts.

In a wok or large pan, heat the vegetable oil strongly. Briefly sauté the garlic, ginger, chili, and the white part of the spring onions until fragrant and lightly colored.
Chef's tip
For an extra authentic touch, you can add a teaspoon of Szechuan pepper when browning the meat.
