- 400 grams Spaghetti
- 100 grams Arugula
- 1 garlic clove
- 1 chili pepper
- 1 organic lime
- 5 tbsp olive oil
- Salt
- Ground pepper
Cook spaghetti according to package directions until al dente. Reserve 100 ml of pasta water and set aside. Wash the organic lime with hot water, dry it, and carefully zest the peel. Then halve the organic lime and squeeze one half. Wash the chili pepper, cut it lengthwise, and deseed it. Finely chop garlic and chili. Wash the arugula and spin it dry in a salad spinner.
Heat olive oil in a pan to sauté the finely chopped chili and garlic. Now mix the reserved pasta water with the arugula, lime juice, and lime zest, and serve together with the cooked spaghetti.
Chef's tip
If you like it a bit juicier, simply toss your spaghetti with extra olive oil. For a spicy finishing touch, sprinkle your pasta with freshly shaved Parmesan.
