  • 1000 grams floury potatoes
  • 1000 milliliters vegetable broth
  • 250 grams soup greens
  • 2 onions
  • 20 grams bacon
  • 28 grams fresh marjoram
  • 20 grams fresh flat-leaf parsley
  • 2 tbsp sour cream
  • Salt
  • Ground pepper

Preparation

    Finely chop the onions and render the bacon in the pot. Then peel, wash, and cut the potatoes into small pieces. Remove the bacon from the pot and now fry the onions in the remaining fat.

    Then add the potato pieces and season with salt, pepper, and paprika. Afterwards, pour in the broth. Wash, peel, and cut the soup greens into small cubes, then add everything – except the leek – to the soup. Let the potato soup simmer over medium heat for about 15 minutes.

    Then add the leek to the potato soup. Afterwards, wash and finely chop the marjoram and parsley. Add half of these herbs along with the cream to the soup and bring to a boil again. Finally, garnish the potato soup with the remaining herbs and serve.
Tip
If you wish for an additional meat ingredient, you can ideally use Vienna sausages for this.
