Ingredients overview
- 350 g frozen peas
- 120 g yellow onion
- 2 garlic cloves
- 700 ml vegetable broth
- 1 tbsp lemon juice
- 1 tbsp rapeseed oil
- 1 pinch fine salt

Finely dice the onion and garlic. Heat the rapeseed oil in a medium-sized pot over medium heat. Sauté the diced onion until translucent for about 4 minutes. Add the garlic and sauté for another minute.

Add the frozen peas to the pot and pour in the vegetable broth. Bring everything to a boil and simmer over medium heat for about 15 minutes until the peas are soft.

Finely purée the soup with an immersion blender until a creamy consistency is achieved. Season with salt and fresh lemon juice and serve hot.
Chef's tip
For an extra fine texture, you can strain the soup through a sieve after puréeing. A dollop of sour cream or a few mint leaves as a garnish perfectly completes the dish.
