Peel the onion and dice it finely. Also peel the potatoes and cut them into small cubes.

In a medium-sized pot, heat the sunflower oil and butter over medium heat. Add the diced onion and sauté until translucent for approx. 3–4 minutes.

Add the potato cubes and vegetable broth to the pot and bring everything to a boil. Reduce the heat, cover, and simmer for approx. 11–12 minutes until the potatoes are soft.
