Pasta alla Trapanese ist ein sonnenverwöhnter Klassiker aus Westsizilien: Al dente gekochte Nudeln treffen auf ein herrlich aromatisches, ungekochtes Pesto aus süßen Kirschtomaten, gerösteten Mandeln, frischem Basilikum, Knoblauch und feinem Pecorino. In weniger als 20 Minuten servierfertig, herrlich frisch und unwiderstehlich mediterran.

Toast the almonds in a dry pan without fat over medium heat for 3 to 4 minutes until golden brown and fragrant. Then let them cool on a plate.

Bring a large pot of plenty of water to a boil and season generously with fine table salt. Wash the cherry tomatoes and cut them in half. Peel the garlic and roughly chop it. Rinse the basil, shake dry, and pick the leaves.

Preparing Pesto & Cooking Pasta

Cook the pasta in the boiling salted water according to package instructions until al dente. Before draining, scoop out about 100 ml of the starchy pasta water and set aside.

Chef's tip

The secret of Sicilian pesto alla Trapanese lies in its freshness: the tomatoes are processed raw, giving the sauce a wonderfully fruity and light flavor.

For an even more intense almond flavor, you can use blanched almonds or crush the almonds finely in a mortar beforehand.
