Fill a large pot with water, add a pinch of salt, and bring to a boil. Once the water boils, add the whole wheat penne and cook according to package directions until al dente.

Meanwhile, prepare the sauce: Halve the avocado, remove the pit, and scoop out the flesh with a spoon. Place the avocado flesh together with the peas, baby spinach, parsley, lemon juice, finely grated Parmesan, chili flakes, and milk into a blender or food processor.

Blend everything until smooth and creamy. Season the finished sauce with salt and pepper. Important: Do not heat the sauce, as the avocado and Parmesan could change its color and consistency.

Chef's tip

The sauce should not be heated, as avocado can become bitter when heated and Parmesan changes consistency. The residual heat from the pasta is completely sufficient.
