  • 85 g Brown Sugar
  • 1 tsp Chili Flakes
  • 2 Garlic Cloves
  • 180 ml Boiling Water
  • 2 tbsp Lime Juice
  • 2 ½ tsp Salt
  • 200 g Green Papaya
  • 2 Small Carrots
  • ½ Red Chili Pepper
  • 2 tsp Tamarind Paste
  • 4 Cherry Tomatoes
  • ½ Lime
  • 6 Green Beans
  • 2 tbsp Roasted Peanuts

PREPARATION OF THE VEGAN FISH SAUCE

    For the sauce, put 55 g brown sugar, chili flakes, one chopped garlic clove, and 1.5 tsp salt into a bowl and pour 180 ml boiling water over it. Stir well, then add the lime juice. Set aside.

PREPARATION OF THE SALAD

    Cut the green papaya and carrots into fine strips with a julienne peeler or a knife and place them in a large bowl. Peel the remaining garlic, halve the tomatoes. Cut the half lime (with peel) into small pieces and halve the beans.

    In a large mortar, crush garlic, fresh chili, lime pieces, and the remaining sugar (30 g). Add the tomatoes and the prepared vegan fish sauce and lightly crush everything again to combine the flavors. Add the remaining salt (1 tsp) as needed.

    Add the mixture from the mortar over the papaya and carrot strips into the bowl. Mix everything thoroughly with the help of the pestle and a spoon. Let the papaya salad steep for a few minutes so that the flavors can infuse well. Sprinkle with roasted peanuts before serving.
