Place the almonds and cashews in a bowl and cover with warm water. Soak the nuts for 30 minutes, then drain the water and rinse the nuts with water.

Blend the nuts, lemon juice, 4 tbsp olive oil, garlic, and salt in a blender until a slightly sticky mixture forms.

Optional (but recommended): Line a large sieve with a clean kitchen towel and add the feta mixture. Close the towel at the top with a rubber band and place the sieve in a bowl so that excess water can drain from the feta mixture into the bowl. Place the feta mixture in the refrigerator overnight.
