Ingredients
- 200g blanched almonds
- 100g cashew nuts
- half a lemon
- 8 tbsp olive oil
- 2 cloves garlic
- 1.5 tsp salt
- 3 tbsp dried herbs
Preparation
- 1Place the almonds and cashews in a bowl and cover with warm water. Soak the nuts for 30 minutes, then drain the water and rinse the nuts with water.
- 2Blend the nuts, lemon juice, 4 tbsp olive oil, garlic, and salt in a blender until a slightly sticky mixture forms.
- 3Optional (but recommended): Line a large sieve with a clean kitchen towel and place the feta mixture into it. Close the towel at the top with a rubber band and place the sieve in a bowl so that excess water can drain from the feta mixture into the bowl. Place the feta mixture in the refrigerator overnight.
- 4Preheat the oven to 180 °C. Grease a small baking dish and add the feta mixture. Mix the herb blend from 4 tbsp olive oil and the herbs, then brush it over the feta.
- 5Bake the feta in the oven for about 30 minutes until golden brown.
- 6Enjoy the feta with bread or as a garnish for salad.
