Finely chop or grate the chocolate and place it in a small bowl.

Place a generous spoonful of ice cream on the flat side of one cookie. Carefully press a second cookie on top to form a sandwich.

Smooth the edges where the ice cream protrudes with a spoon and immediately roll in the chopped chocolate. Serve immediately or let set briefly in the freezer.

Chef's tip

For a colorful variation, you can also use colorful sprinkles instead of chocolate.
