Preheat the oven to 180 °C (top/bottom heat) and line a muffin tin with paper liners or grease it well.

Prepare the dough

In a large bowl, mix flour, baking powder, baking soda, salt, and ground pepper. Stir the grated cheese and diced ham (if using) into the dry ingredients.

In a separate bowl, whisk the eggs. Add milk, oil (or melted butter), Dijon mustard, and finely chopped chives, and mix everything well.

Chef's tip

For a vegetarian version, simply omit the ham or replace it with diced bell peppers or sun-dried tomatoes.

The muffins can be frozen perfectly and reheated briefly in the oven or microwave when needed.
