Preparation method
In a bowl, mix flour, salt, and a pinch of cayenne pepper. Add the cold butter cubes and work them into the flour with your fingers or a pastry blender until the mixture resembles coarse crumbs. Stir in the finely grated Parmesan.
If the mixture is too dry, add 1 tablespoon of cold water and quickly knead into a smooth dough. Form the dough into a ball, wrap in cling film, and let rest in the refrigerator for 30 minutes.
Preheat the oven to 180 °C. On a floured surface, roll out the chilled dough to about 3-4 mm thick. Cut out crackers with a cookie cutter (e.g., round) and carefully place them on a baking sheet lined with baking paper.
Chef's tip
For a Mediterranean touch, you can also mix dried rosemary or thyme into the dough.
The crackers will stay fresh and crispy for several days in an airtight container.
