Preparation of the Churros

In a shallow bowl, mix sugar and cinnamon and set aside.

In a second, larger bowl, mix flour, baking powder, and salt. Add the oil (1 tbsp) and 250 ml hot water. Stir until the dough combines – it should be thick and sticky, not thin or watery.

In a small pot, wok, or a small but deep pan, heat the remaining vegetable oil to about 5 cm high over medium heat (approx. 170 °C). Fill the dough into a piping bag with a star nozzle (approx. 8 mm diameter). Set aside while the oil heats up.
