Preparation method
Preheat the oven to 135–140 °C and line two baking sheets with baking paper.
Place the 3 egg whites in a medium bowl and beat them with a mixer until stiff. Gradually sprinkle in the cane sugar while beating until the meringue is firm and glossy. Then carefully fold in the shredded coconut with a spatula.
Using a spoon, place small mounds (approx. 2–3 cm diameter) of the coconut mixture onto the prepared baking sheets. Bake the macaroons in the preheated oven for about 25–30 minutes.
Chef's tip
For a particularly fine aroma, you can add a pinch of vanilla or some organic lemon zest to the mixture. Store the macaroons in an airtight container to keep them nice and moist.
