  • 400 g zucchini
  • 1 tbsp extra virgin olive oil
  • 25 g tahini paste
  • 1 fresh garlic clove
  • 1/2 tsp fine table salt

Preheat the oven to 180 °C. Wash the zucchini and cut it into slices about 1 cm thick. Line a baking sheet with parchment paper and spread the zucchini slices on it.

Roast the zucchini in the preheated oven for approx. 40 minutes until soft and lightly browned. Then let cool briefly.

Place the roasted zucchini slices together with the tahini, olive oil, peeled garlic clove, and salt in a tall container. Puree everything finely with an immersion blender until a creamy consistency is achieved. Arrange and serve the hummus as desired.
