Preparation method

Finely dice the red onion and garlic. Deseed the bell pepper and cut into small cubes. Roughly chop the parsley.

Heat the rapeseed oil in a large pan. Sauté the diced onion until translucent. Add garlic, bell pepper cubes, cumin, and paprika powder (sweet and hot) and briefly roast until fragrant.

Add the canned peeled tomatoes and roughly crush them with a spatula. Let the sauce simmer over medium heat for about 8-10 minutes until it thickens slightly. Season with salt and pepper.
Chef's tip
For a vegan version, you can replace the eggs with chickpeas and omit the cheese or use a plant-based alternative.
If you like it particularly spicy, you can also fry a small chili pepper with the onions.
