Ingredients

  • 350 g frozen peas
  • 1 yellow onion (approx. 120 g)
  • 2 garlic cloves
  • 700 ml vegetable broth
  • 1 tbsp lemon juice
  • 1 tbsp rapeseed oil
  • 1 pinch fine salt

Preparation

    First, finely chop the onion and garlic. In a medium-sized pot, heat the rapeseed oil over medium heat and sauté the onion until translucent for about 4 minutes. Then add the garlic and sauté for another minute.

    Add the frozen peas to the pot, pour in the vegetable broth, and bring to a boil. Let the soup simmer over medium heat for about 15 minutes.

    Finally, finely blend the soup with an immersion blender. Season with salt and fresh lemon juice and serve warm.
Tip
For an extra fine texture, you can strain the soup through a sieve after blending. A dollop of sour cream or a few fresh mint leaves perfectly rounds off the flavor.
