Preparation method

Preparation of the Dip Sauce

For the sauce, thoroughly mix ketchup, grated cucumber, 1 tbsp grated carrots, 1 tbsp chopped coriander, finely chopped chili, mint strips, and rice vinegar in a small bowl and set aside.

Preparation of the Filling and Rolls

Wash zucchini, deseed, and cut into fine strips. Peel the remaining carrots and also cut into fine strips. Cut red onion and white cabbage into very fine strips. Vigorously knead everything in a bowl with soy sauce, oyster sauce, sesame oil, sugar, salt, and pepper. Drain in a sieve for 8 minutes.

Finely chop spring onions and the remaining coriander and mix with the drained vegetables.
