Ingredients
- 10 rice papers
- Fresh vegetables of your choice (bell pepper, cucumber, avocado, carrots, mango, coriander, red cabbage, ...)
- Tofu (optional)
- Rice noodles (optional)
- 2 tbsp peanut butter
- 5 tbsp water
- 1 tsp agave syrup
- 2 tsp soy sauce
- 2 tsp lime juice
Instructions
- 1First, prepare your vegetables and fruit. To make rolling easier, cut all ingredients you put into the summer rolls to the same length. If you are using tofu, you can decide whether you want to fry it in a little oil beforehand. Prepare the glass noodles according to the package instructions.
- 2Take a large bowl with warm water. Place a rice paper in it and wait a few seconds until it is soft enough to roll. Take it out of the water and place it on a board. Place the filling of your choice approximately in the middle of the lower third of the paper.
- 3First, roll up the summer roll from the bottom so that the filling is completely enclosed. Then fold the left and right sides of the summer roll inwards and roll it up tightly. Repeat the process with the remaining summer roll paper and filling.
- 4For the peanut dip: Mix peanut butter, water, agave syrup, soy sauce, and lime juice and season to taste. Serve the finished summer rolls with the dip and enjoy fresh!
