Beat eggs and sugar until frothy with a mixer. Then stir in the milk. Add flour with a pinch of salt and whisk everything into a smooth batter. Finally, let the batter rest for about 15 minutes.
Heat a small pan over medium heat with a little butter. Carefully spread about one-eighth of the pancake batter into the pan with a small ladle, so that the bottom of the pan is evenly covered. As soon as the batter can be lifted from the bottom, flip it to the other side. Bake both sides until golden brown.
Bake the remaining pancakes according to the same instructions. Always stir the batter briefly beforehand.
Chef's tip
You can also replace whole milk with vegan soy or almond milk. If you want particularly fluffy pancakes, replace part of the milk with carbonated mineral water.
